Courgetti spaghetti with garlic prawns

This is a 7minute meal

It is healthy and tasty and a good way to get your children to eat vegetables!

It’s allergen free and low carb

Ingredients (1 portion)

  • 1 courgette
  • 1 clove of garlic (crushed)
  • 10 prawns
  • 1 tbsp. coconut oil
  • Season to taste with salt and pepper

(Optional extras: add some nut free pesto, homemade passata or a sprinkling of Parmesan if you are not allergic)

  • Spiralise your courgette- this gives you the most spaghetti like shape (if you don’t have one you can use a peeler to create courgette strips instead)
  • Heat the coconut oil at a medium heat, add in the crushed garlic and remove when it starts to brown (burnt garlic does not taste nice)
  • Once the garlic infused oil is ready, add the prawns and cook until no longer translucent, normally takes 3-5 minutes
  • Once nearly cooked, add the courgette and cook for 60-90 seconds until soft
  • Serve just like this or with one of the optional extra’s

  1. Thanks Tasha – great recipe! I tried to make courgette spaghetti the other day – which was delicious – but there is so much water that comes out of it, even when I dry it thoroughly with a paper towel before cooking. Any advice?

    1. Hey there, That is a great question, thanks so much for posting!
Water comes out when you cook courgette because it is made of 95% water, actually the more you cook it, the more comes out, so eating it less cooked is better. The other way of getting it out is putting salt on it before you cook it as it will draw out the water and leaving it for a while 5-10 mins, then putting it in a cloth and squeezing the water out.
      I hope that helps!
