Sweet and salty, this marinade can be used for everything
Mackerel is an oily fish and full of wonderful omega-3, it’s sustainable and doesn’t break the bank!
It’s the same marinade used by Nobu on their infamous black cod dish
It takes only a tiny bit of preparation and little time to cook
Once you have tasted it, you’ll be addicted to the umami
Ingredients
- 2 mackerel fillets
- 200g white miso (it is sweeter)
- 2 tbsp. sake (30ml)
- 2 tbsp. mirin (30ml)
- ½ tbsp. salt (for umami)
(Optional: if you don’t like fishy fish then use cod instead)
Method
- Wash and salt the fillets and leave for 30 minutes’
- Combine the miso, sake and mirin
- Wipe down the fillets, as a little water will have come out of them
- Cover the fillets in miso completely and leave in the fridge for a day
One day later
- Pick up the fillets and wipe an excess paste from them (do not take off everything, just do it so the fillets are not dripping)
- Place on foil in a preheated oven at 180c for 15 minutes or until the fish is cooked, alternatively grill until the miso is starting to caramelise (colour)
- Delicious and nutritious!
